Case Study 1

EVENT: Lord Taverners 'BIG BIG CHARITY BALL'
LOCATION: Fenn Farm, Milton Keynes
DATE: May 2002
BRIEF: To serve a four course meal to 1,500 guests in a tented pavillion. Additionally, bar facilities were required including a cocktail bar, wines and reception drinks.

A team of 20 Chefs, 100 waiting staff, our fleet of mobile kitchens and refrigerated units made the Ball a huge success.

Case Study 3

EVENT: Wedding at Pensax Grange
LOCATION: Stockton-on-Teme
DATE: September 2006

Dear Phil

I enclose my cheque in settlement of your invoice number 11179, taking into account credit note number 955.

Despite the lousy weather, the day went very well, and all concerned had a thoroughly good time. The general standard of catering and service was highly praised by many of our guests, and please tell Stuart that everybody thought the food was wonderful!

FUNCTION: 21st Birthday of College & Retirement
LOCATION: Cadbury Sixth Form College
DATE: July 2004
CLIENT: Events Organised
GUESTS: 200 people

Starters
Crab, salmon and prawn tart with spiced rocket salad.
Open cap mushrooms filled with roasted peppers and tomatoes and topped with mozzarella with tomato and basil coulis.
Mediterranean vegetable salad with smoked chicken and parsnip crisps.

Main Courses
Gourmet jerk style chicken filled with Caribbean vegetables served with rice and peas.
Salmon fillet with pan fried bacon served with red wine sauce.
Spinach and mushroom filo bundle.

Desserts
Coffee filled profiteroles with chocolate sauce.
Tropical fresh fruit salad.
Homemade apple and blackberry pie.

FUNCTION: Surgical Sixties Dinner - Annual dinner of sixty surgeons
LOCATION: Marquee at house in Hagley
DATE: May 2004
CLIENT: Dr. I and Dr. R Donovan
GUESTS: 65 people

Canapé selection on arrival.
Fan of charentais melon with smoked ham and redcurrant port sauce. ~
English fillet steak with Highland whisky and peppercorn sauce accompanied with:
Pommes Dauphinoise
Fine green beans
Ratatouille.

Symphony of cheesecakes:
Individual lemon, raspberry and chocolate cheesecakes with chocolate sauce and cream.

Cheese and biscuits with celery and grapes.

Fresh brewed coffee.
